This fun and festive summer dish can be served as a first course or a light entree. And it really, really loves to be eaten outside with a cold crisp glass of sauvignon blanc.

Ingredients:
2 Mild Italian Pork Sausages, sliced 1" thick on the bias
4 large zucchini or 6 small, peeled lengthwise with a vegetable peeler
1 tablespoon olive oil
salt and pepper to taste
parsley for garnish (optional)
Method:
Heat a medium skillet over medium heat. Add sausage and sautee until cooked through. Remove sausage from the skillet and set aside. Add zucchini ribbons and sautee for about 2 minutes. Season with salt and pepper. Arrange zucchini ribbons in a shallow bowl and place sausage on top. Garnish with parsley if desired.
