
Ingredients:
1/4 lb. watermelon, sliced into thick short planks
12 ciliegine mozzarella balls
12 mint leaves
12 skewers
extra virgin olive oil for drizzling
red wine vinegar for drizzling
salt and fresh cracked pepper to taste
Method:
1.) Turn grill on to medium.
2.) Cut watermelon into thick short planks and skewer.
3.) Remove mint from stems.
4.) Grill watermelon skewers on both sides.
5.) Remove from grill and skewer with mint leaf, and mozzarella. Drizzle with red wine vinegar and extra virgin olive oil. Season with a bit of salt and pepper and serve immediately.
