
Ingredients:
2 cups watermelon
2 medium tomatoes
1/4 red onion, julienned
4 oz. feta cheese, crumbled
1/2 cup kalamata olives
1 teaspoon fresh oregano leaves
2 tablespoons extra virgin olive oil
juice of 1 lemon
salt and pepper to taste
Method:
1.) cut watermelon into rectangular prisms.
2.) Core tomatoes and slice into wedges.
3.) Mix together the lemon juice, extra virgin olive oil, fresh oregano, and salt and pepper.
4.) julienne the red onion.
5.) Add the red onion to the dressing mixture.
6.) Combine the watermelon, tomatoes in a bowl and toss through with dressing and red onions.
7.) Plate on a rectangular platter and garnish with olives and feta cheese.
