Watermelon Peach Arugula Goat Cheese Salad



Ingredients:

2 peaches, sliced
1 cup of watermelon, chopped
1/2 lb. arugula
4 oz. goat cheese, crumbled
1 small shallot, finely diced
2 teaspoons white balsamic vinegar
2 tablespoons extra virgin olive oil
salt and pepper to taste

Method:

1.) Combine shallots and white balsamic vinegar for 10 minutes. The acid in the vinegar will “cook” the shallots, taking the raw edge off.

2.) Slice peaches and set aside. Cut in half perpendicular to the seam, remove pit and slice into wedges.

3.) Add the olive oil to the vinegar and shallots. Add salt and pepper. Let’s taste it with a leaf of the arugula. Taste the dressing in context to the salad- not alone.

4.) Toss the arugula and the dressing together. Arrange in a bowl. Garnish with peaches, watermelon and lastly goat cheese.
